with camping season coming close to an end and my lovely husband working around rocanville we decided to move campgrounds, leaving the lake and into a beautiful, quiet campground in the valley. close to a cute creek down the hill perfect for fishing and swimming!  that all being said yesterday was long between packing up the camper, moving and then unpacking again and continuing to get everything set up to our preferences today.  this recipe is so easy and so quick i did it over a fire but it can be just as easily done on a stove stop or electric frying pan!!                                INGREDIENTS  - 3 large potatoes  - 1/3 large onion or 1 small onion  - 1 steak cooked to preference and cut into small pieces - garlic powder, salt, and pepper  - 1/2 cup grated cheese (optional)  - 3TBSP canola oil  -1/3 cup BBQ sauce (optional)           ...

Black Bean Beef stir fry

In the spirit of continuing trying different cultures of food my lovely boyfriend gave me the idea of a black bean stir fry! now I have never had a black bean sauce so to say the least I wasn't 100% sure about this but it did not disappoint!  Considering I have never heard of black bean sauce, I did quite a bit of reading online to figure out what the best way to make this dish would be. After reading a few recipes I opted to not follow any of the recipes to a tee. instead I put my own small twists into this dish. Extra Cheesy Camp Lasagna

  As summer comes to an end and the evenings begin to get cooler and cooler I thought a nice campfire lasagna would be a great supper, and it was!  I started my fire to cook over roughly 2 hours before the lasagna pan actually got onto the grill, by then there were plenty of good coals to cook over. be mindful this recipe takes lots of time!   With fall and winter just around the corner I am getting the freezers ready with quick easy things to heat up! This recipe has been a major hit in my house since i started making them 4 years ago.  this recipe can also be so versatile, if you are allergic to something or just simply don't enjoy that item it can easily be removed or substituted with something else! We live in rural Saskatchewan but travel often in our camper so my recipes range from cooking in/on regular stoves, camper oven,campfires, and soo much more.
