Extra Cheesy Camp Lasagna

As summer comes to an end and the evenings begin to get cooler and cooler I thought a nice campfire lasagna would be a great supper, and it was!

I started my fire to cook over roughly 2 hours before the lasagna pan actually got onto the grill, by then there were plenty of good coals to cook over. be mindful this recipe takes lots of time! Don't make my mistake and start the fire at 6:00 PM because you won't be eating till nearly 11:00 PM. 😂

                                                                    INGREDIENTS:

- 1.5 lb ground beef

- 3 cups tomato sauce or pasta sauce

- 2 garlic cloves, minced

- 1 large onion

- salt, pepper, italian seasoning to taste

- 3 cups cheese of choice

- 1/2 cup cottage cheese

- 2 eggs

-oven ready lasagna noodles

-oil to grease pan

                                                                       DIRECTIONS

make sure you have your fire going, wait 30+ minutes before starting to cook,

Be sure to keep the fire going to ensure you have good heat to last throughout the cooking process

1) in a cast iron or camp pan start browning your meat, once nearly done add onion and garlic and finish cooking the meat, drain excess grease, season with salt pepper and italian seasoning to taste.

2) in a bowl mix together 3/4 cup of the shredded cheese, cottage cheese, and eggs. set aside

3) in your pan with cooked ground beef add in sauce and mix well let simmer for 10-15 minutes mixing often

4) while the sauce is simmering get a pan ready in the photos you can see I used a tinfoil pan, but cast iron would work just as well if not better! lightly grease your pan

5) once the sauce is done simmering add some to the bottom of you prepared pan, and time to begin assembly, a layer of noodles 1/3 of egg and cheese mixture, 1/4 meat sauce and some cheese, repeating this strategy 3-4 times finish off by topping with last of cheese, cover with foil or lid!

6) Now the waiting game begins! Find a spot over your fire that isn’t too hot, don’t want to burn the bottom!

Check it often and move it around as needed!

Mine took roughly 3 hours and 20 minutes to bake in a 9x9 deep dish pan

7) once cooked through let sit 5-10 min before cutting into and devouring!
